A root cellar keeps months of vegetables fresh with no electricity by using two free resources: the steady cool temperature a few feet underground, and high humidity. You don't need a hillside or a digger — the designs below scale from a single buried barrel to a walk-in, and most suit a small lot. Aim for 32–40°F and 85–95% humidity, and your potatoes, carrots, apples, and squash will last through winter.

1. The buried barrel cellar (smallest, cheapest)
A food-grade barrel or trash can buried on its side or upright with the lid at grade, packed around with straw. Holds a surprising amount of root veg and costs almost nothing. Perfect for a first try or a tiny lot — dig it in a day.
2. The buried trash-can pit
A galvanized can sunk into a well-drained spot, a bale of straw over the lid, a board and stone on top. The classic Depression-era method. Best where the ground freezes hard enough to need the straw cap for insulation.
3. The basement corner cellar
If you have an unheated basement, partition the coolest corner (north or east, against exterior walls) with stud-and-foam-board walls, add a vent low and high, and you have a cellar with no digging at all. The easiest upgrade for most homes.

A small structure built at grade and buried on three sides with soil, so you walk in rather than climb down. Easier on the knees and far roomier. The right choice if you preserve a lot and have space along a bank or slope to berm against.
5. The hillside cellar
The traditional design: dig into a north-facing slope, line with stone or block, arch or beam the roof, cover with soil. The gold standard for temperature stability — if you have the hill, this is the cellar your grandchildren will still use.

The rule every root cellar lives or dies by: ventilation
The single most common failure is no airflow. You need a low intake (cool air enters near the floor) and a high exhaust (warm, ethylene-laden air leaves near the ceiling). Without it, apples ripen everything around them and the whole store sprouts or rots. Two simple pipes, positioned right, are worth more than thick walls.
What stores well — and what to keep apart
Potatoes, carrots, beets, turnips, cabbage, and apples love the cold, damp main room. Keep apples away from potatoes — apple ethylene sprouts them. Onions, garlic, and winter squash want it drier and a touch warmer, so give them a separate shelf higher up or a different spot entirely. Store nothing bruised; one soft potato spoils the crate.
